2. The full moon is clear and white on this frosty morning. It's so sharp that I can see all the shadows of its landscape. 3. I've been experimenting with frosting to get a buttercream that is light and fluffy enough to pipe onto cupcakes. I can't bring myself to use Crisco in order to get a white frosting, so mine remained butter-colored. I am pleased with the results so far. This makes more than enough for 12 cupcakes.
Bakery Style Frosting
2 sticks butter (I use salted because I like a little salt with my sweet.)3 1/2 cups sifted confectioner's sugar
1/2 tea. vanilla or almond extract, depending on what flavor you like.
Blend butter until it's smoothed out. Then add confectioner's sugar, 1/2 cup at a time, until blended. Add vanilla. Increase speed to medium-high and beat for 3 minutes.
*If you want white frosting, substitute 1/2 cup non-hydrogenated shortening for one stick of the butter and use
almond extract or a clear vanilla if you can find it.

ReplyDeleteI love cream cheese frosting - I guess it's still a little off white when you are done.
ReplyDeleteMy coworker makes a white frosting and I just asked her what she does - it's canned white frosting mixed with cool whip! I guess we'd call that semi-homemade. :)
