Making a Comeback, New Mothers, Colorful Dish


 1. Asparagus flourishes where I had just dug it up two weeks ago. I thought I had eradicated the unsightly bed in order to plant something new so I'm impressed by its audacity. Now I have to decide who will win this prime real estate.
2. Newborn pony is cute as a button in his little, compact size.
3. I run my hand over the coat of another newborn foal. Despite his shaky legs and vulnerable look, I can feel strong, rippled muscles just beneath his downy fur.



Sprinkle asparagus with olive oil and coarse salt, roast for 10-15 minutes at 450°. Let cool for 10 minutes. 
Mix together 1/4 cup Balsamic vinegar, 7 tablespoons olive oil, 1 garlic clove minced, 1 tablespoon chopped fresh basil and 1/4 tea. salt.
In another bowl, mix together 1/4 cup finely chopped red onion, 1/2 cup finely chopped red bell pepper and 1 cup halved cherry tomatoes. Toss this with 1 tablespoon of the Balsamic vinegar dressing.
Arrange asparagus and avocado slices on a bed of lettuce. Top with tomato mixture and drizzle remaining Balsamic vinegar dressing over all.
